Chicken Rollups and Blueberry Jell-O




The Chicken rollups (p.105) are very similar to a recipe that my Mom made. So I was excited to try them. I really liked the flavor the cream of mushroom soup and olives added. I've never had them in chicken rolls before. This recipe makes a TON of rolls. Even cutting the recipe in half I still had plenty to feed my family 2 whole meals. Also, I only added 1 can of cream of mushroom. I left out the other 2 creamed soups. It was a pretty messy process rolling these up, but lots of fun for the kiddos to help with. And in the end, who cares how messy it is as long as it tastes good! It took my rolls more like 20 minutes to cook through. I decided not to serve it on rice, or with any gravy on top. I kind of like them just the way they are!

I have to admit I wasn't sure about combining pineapple, blueberry pie filling and black cherry jell-o. But the blueberry jell-o (p. 51) was delicious! I couldn't stop eating it. It's super yummy with the creamy topping. I had some with my dinner, then a little more after dinner, then a little more for dessert :)
